RE: refocus on mac
The problem you'll have is that GimpShop is based on a rather old Gimp version, so recent plugins won't work with it, and the refocus plugins tend to be recent.

RE: refocus on mac
There is a "refocus" plugin: http://refocus.sourceforge.net/ but I'm not sure someone compiled an OSX version (but it could be part of some package).

RE: refocus on mac
Similar to refocus, iterative-refocus, again source only, http://refocus-it.sourceforge.net/ maybe you can compile it.
Alternatives, not Gimp, a java application, UnShake
http://www.zen147963.zen.co.uk/Unshake/index.html It says there is a MAC
flavour, I thought java worked anywhere.
edit: removed the '.' at the end of the url - should work now

All the above are old, 2003/4 when images tended to be smaller, UnShake in particular takes an age to work even on a modest sized image, so you need to be very-very patient. The results can be unspectacular as well.

If the out of focus is not too great, maybe a little sharpening might improve things,
Wavelet decompose is available as a script http://registry.gimp.org/node/13549

some screenshots of the above in that order - refocusit, unshake, wavelet decompose.
