Photo resolution vs size

Photo resolution vs size
I am confused as to which setting in GIMP takes precedence in terms of maintaining print quality after cropping. Example: my camera produces a photo 26 X 19 inches at 180.00 resolution. I want to make a high quality print at 5 X 7 inches after cropping. When do I change the resolution to 300 dpi (or do I?). Or do I just change the width/height to 5 X7 and leave the resolution at 180? Or do I change them both?
