Oddly specific feature
Is there a feature where I can take several low- light pictures and use GIMP to compute what is noise and what isn't? The concept is pretty straightforward, and I can see it being part of this software.

Gimp is mostly an interactive thing. You can do that (using "layer modes") but I won't recommend it, because that would be a lot of work (plus Gimp only works with 8-bit/channel so you quickly get roundoff errors).

ImageMagik is a command-line tool that can do this with better accuracy: http://www.imagemagick.org/Usage/layers/...e-sequence

Otherwise there is certainly more suitable software for this, what you want to do is a very popular technique with amateur astronomers, so google the astrophoto forums. This kind of software will also aligns the images accurately before averaging.
