I'm new to GIMP, I've played around with working on Jpeg's and exporting them and png files and such...but now I want to create my own files for work where I can go back and edit layers later. How do I do this? I'm lost on this part.

Save files with the .XCF extension. This is Gimp's "native" format and saves everything (layers, selection, path, channels....)
