Coloring with the eraser?
I'm a newbie and the tutorial I just watched about coloring black and white photos had me using the eraser to add the color, he didn't explain why and I now need to know how to erase something if I don't like it.

You need to understand how layers work. When you erase, its not exactly like pencil & paper(Gimp is somewhat a 3D space), you're erasing directly on a layer.
Here is maybe for you great representation of how erasing in Gimp works in this post:

If you can please link to the tutorial, then we can see the misunderstood part.

If all you want is a white background when you erase. Create a new white layer by clicking on the white note icon, bottom left, in the layers window/dialogue box.
